Beef liver is known as nature’s multivitamin . Liver is one of the most nutritionally dense foods on the planet, packed with iron, riboflavin, vitamin B12, vitamin A, and copper.
Just one serving can help you hit your daily needs for many essential vitamins and minerals. Eating it straight isn’t always for everyone, which is why we’re fans of these ‘sneaky liver’ meatballs.
Ingredients
1 lbs Black Angus ground beef
0.25 lbs Black Angus liver
1 cup milk
1/4 cup fresh herbs, chopped
2 tbsp breadcrumbs
1 tsp kosher salt
1/4 onion, diced
2 garlic cloves, minced
Instructions
Rinse liver in cold water and soak in milk for at least 30 minutes and up to 2 hours. Keep bowl with milk and liver in the fridge. The lactic acid in the milk will help to reduce the game flavour of the liver, and tenderize the meat.
Preheat oven to 375F.
Purée liver in the food processor until smooth.
Mix ground beef, liver, breadcrumbs, herbs, garlic, onion, and salt together. Roll into golf ball sized meatballs.
Heat large stainless steel pan over medium-high heat. Add 1 tbsp of oil and allow to heat until just before smoking.
Carefully place meatballs on to pan and sear. Cook for 1-2 minutes. Flip all meatballs and place pan in oven to finish cooking. If your pan does not have a stainless steel handle, continue cooking on medium heat.
After 10 minutes, remove meatballs from oven. The internal temperature should be 165F. Continue to cook if needed.
Serve with orzo, pasta, on a wrap, or in a sandwich.
