How to cook a perfect T-bone steak

The T-bone steak can be a bit intimidating, but with a few simple steps, you can cook up a restaurant-quality meal at home.

Technically, the T-bone steak is two steaks in one: a New York Strip and a Filet Mignon, the most tender cut of beef. This is a thick steak, which means a cast-iron pan and your oven will help to get a delicious sear and tender meat. Depending on what else you serve, a single T-bone steak can serve 2-3 people.

How to cook a perfect T-bone steak:

  1. Bring your steak to room temperature by removing it from the fridge 30-60 minutes before cooking. Generously salt with kosher salt.

  2. Preheat oven to 400°F and begin heating your cast-iron pan on medium-high heat.

  3. Continue heating cast-iron pan for 5-7 minutes and pat your steak dry with a paper towel (the key to a great sear).

  4. Once pan is smoking, add 1 tbsp. of oil (canola or avocado oil work well).

  5. Sear steak 2 minutes per side. Using metal tongs, hold steak on its side to render the fat for about 1 minute.

  6. Reduce burner to medium-low heat. Add 2 tbsp. butter and 2 garlic cloves. Use a spoon to baste butter onto steak for 1-2 minutes.

  7. Place cast-iron pan into oven and cook for ~5-7 minutes.

  8. Use a meat thermometer to check both sides for doneness. Medium rare steak is 130-135°F.

  9. Remove from the pan and rest on a cutting board for 5-10 minutes.

  10. Cut off the bone and enjoy!
