Yukon Gold: These potatoes have a deep yellow flesh, rich taste, and a medium starch level making them a great all-purpose potato. You can use these for mashed potatoes and they will also hold their shape in soups and stews.
Red Potatoes: These are a waxier potato and are great in potato salads, soups, and gratins.
Russet Potatoes: Popular for their high starch content. These potatoes make for crispy oven baked fries and fluffy mashed potatoes.
