Ingredients

2 cups berries, washed

4 large eggs

1 teaspoon vanilla extract

½ cup sugar

1 ½ cups all-purpose flour

1/3 cup butter, melted

1 ¼ cups milk

Cooking spray

1 tablespoon icing sugar

Instructions

  1. Preheat oven to 350°F.

  2. Thoroughly grease a round 9-inch cake pan with cooking spray.

  3. Evenly spread the berries over the bottom of the cake pan.

  4. Whisk together eggs, sugar, and vanilla until smooth.

  5. Add the flour to the egg mixture and whisk again.

  6. Add the milk and melted butter to the egg and flour mixture and whisk until fairly smooth. A few lumps are ok!

  7. Pour prepared batter over the berries into the cake pan.

  8. Bake for 35 – 40 minutes.

  9. Remove dish from the oven. It is going to be so puffy and tall when you first remove but will quickly fall. Don’t worry, that’s normal!

  10. Once the dessert has fallen, sprinkle with icing sugar, and let cool.

  11. Serve with whipped cream and more berries.
