White potatoes: These potatoes have a thinner skin and a medium starch level making them a great all-purpose potato. You can use these for mashed potatoes and they will also hold their shape in soups and stews.

Red Potatoes: These are a waxier potato and are great in potato salads, soups, and gratins.

Russet Potatoes: Popular for their high starch content. These potatoes make for crispy oven baked fries and fluffy mashed potatoes.

You can store your potatoes for the winter in a cool dark place. Be sure to keep them away from any light or moisture and they will store for months.
