Rhubarb Simple Syrup

Simple rhubarb syrup is placed on display at the Thames River Melons farm.

Makes ~1.5 cups

Ingredients

1 lb rhubarb, washed, trimmed, and chopped into chunks

4 cups water

2 cups sugar

Instructions

  1. Combine rhubarb and water in a medium-sized pot and place on the stove over medium heat.

  2. Cook until softened and rhubarb is broken down.

  3. Once softened, strain the liquid out into a bowl. You can discard the rhubarb pulp, or save for using later in baking or other recipes.

  4. Transfer the liquid back to the pot, stir in the sugar, and bring the pot to a boil.

  5. Reduce heat and simmer mixture for 5 minutes.

  6. Let cool, then transfer to a jar or bottle. Use in sparkling water, cocktails, or salad dressings.
