Black Bean & Carrot Burger Patties

Makes 9 patties (could make 6 larger ones instead!)

Ingredients

1 can black beans: drained, rinsed

1 carrot, grated

¼ cup panko bread crumbs

1 clove garlic, minced

1 egg

¼ cup ketchup

½ teaspoon each: chilli powder, paprika, onion powder

Salt & pepper to taste

Cooking spray

Instructions

  1. Preheat oven to 375°F. Line a baking sheet with parchment paper and set with aside.

  2. Add black beans to a medium-sized bowl and partially mash – some beans should remain whole while others are mushed up completely. This will help the patties stick together!

  3. Add remaining ingredients to the bowl and mix until completely combined.

  4. Now portion your burgers! Scoop approximately ¼ cup of the mixture out at a time and form into a round pattie. If you’d like them to be bigger, go with closer to ½ a cup.

  5. Place on the prepared baking sheet and press down using a spatula to flatten.

  6. Spray patties with cooking spray, then transfer to the preheated oven.

  7. Bake for 20 minutes, until patties are golden brown.

  8. Remove from the oven and let cool completely. These patties make the perfect filling for your burger bun, or make a delicious salad topper. Store in the fridge for up to 5 days, or freeze and pull out as you need them.
